|Apple and Raspberry muffins|
I love lists. I am one of those people who will write something on the list and then cross it off, even if it wasn't on the original list. I use my phone a lot for lists, but there is something so satisfying about crossing off items on a paper list.
I also love breakfast food- at what other meal of the day is it acceptable to have something either completely savory or sweet? Breakfast food is good at anytime of day and we all know how breakfast is supposedly the most important meal of the day. However, since becoming gluten free, I find that it is the most difficult one to manage. I have become a bit stuck in a breakfast rut and have been eating the same thing for breakfast for a few weeks and am thoroughly sick of it (can anyone relate to this?). I have decided to give myself a positive challenge and expand my repertoire of things I prepare for breakfast for myself and family and will post the results on the blog. I have decided I will go through my recipe books and food magazines for inspiration for this as a starting point. Anything I make though, will have to be pretty quick to put together, at least preparation wise and have ingredients that I have already in the pantry (or ones I will definitely use again). They also need to be something everyone will eat (this will be the hardest). One of the best things about this challenge -besides eating the food of course- is I now have a lovely long list of things I hope to make over the next few weeks. The first thing I have made with this breakfast challenge in mind are apple and and raspberry muffins. They are delicately flavoured with nutmeg and cinnamon and are delicious as a mid morning or afternoon snack if too difficult to get together for the morning. The recipe is from 'Gluten Free and Easy' by Robyn Russell. I will post my own variation of this recipe when I'm able. I hope you are having a lovely weekend.
